Salt refers to sea salt, lake salt, well salt and mineral salt. Salt is one of the most important foods for human life. Salt is not only the main seasoning, but also an important source of minerals (mainly sodium) in the body. These minerals have important physiological functions. For example, sodium is an important component of intercellular fluid, which plays an important role in maintaining the acid-base balance in the body, the osmotic pressure between tissues and the excitability of muscle nerves. When the body lacks salt, it will feel weak all over, headache, dizziness, muscle cramps, pain, etc. Therefore, people have attached great importance to salt intake since ancient times. The amount of salt required by the human body is related to the food eaten. Generally speaking, less is required for meat and more is required for vegetarian food. Animal foods contain more sodium salt, so infants do not need to eat salt. In recent years, foreign reports have shown that long-term excessive intake of sodium salt can promote high blood pressure and blurred retina, so my country proposes a daily intake of 4~78/person, the United States proposes a daily intake of 10g/person, Japan proposes a daily intake of 7~8g/person, and France proposes a daily intake of 2g/person. The sulfate content in my country's mineral salt is relatively high. In addition to a small amount of calcium and salt, it is mainly sodium sulfate. The high sulfate content in table salt can make the salt taste bad, bitter and astringent, which affects people's digestion and absorption and is harmful to health. The soluble barium in table salt is a muscle poison. Eating a large amount of it at one time can cause acute poisoning and death. The acute poisoning dose is 0.2~0.5g, and the lethal dose is 0.8~0.9g. Long-term ingestion of small amounts can cause chronic poisoning, numbness and tingling all over the body, weakness in the limbs, and severe flaccid paralysis, so it is also called "arthritis". In the past, Sichuan Province has had accidents caused by poisoning due to excessive barium content in table salt. The hygienic standards for table salt are as follows.
(1) Sensory indicators White, strong taste, no visible foreign matter, no bitterness, astringency, and no peculiar smell.
(2) Physical and chemical indicators ① Sodium chloride (in thousand basis): sea, lake and well salt shall not be less than 97%, and mineral salt shall not be less than 96% ② Water insoluble matter (%): sea, lake salt and pan salt (well and mineral salt) shall not exceed 0.4%, and vacuum salt (well and mineral salt) shall not exceed 0.1%.
③ Sulfate (%, in SO·): sea, lake and well salt shall not exceed 2%, and mineral salt shall not exceed 4% ④ Magnesium (%, in Mg): all kinds of salt shall not exceed 0.5%.
⑤ Barium (mg/kg, in Ba): all kinds of salt shall not exceed 2.0mg/kg.
⑥ Arsenic (mg/kg, in As): all kinds of salt shall not exceed 0.5mg/kg.
⑦ Lead (mg/kg, in Pb): all kinds of salt shall not exceed 1.0mg/kg.
⑧ Fluoride (mg/kg, calculated as F): sea, lake and salt should not exceed 2.5mg/kg, and mineral salt should not exceed 5.0mg
