Sources of contamination from edible fats and oils

Commercial edible oils and fats mainly include vegetable oils made from oil crops, such as soybean oil, peanut oil, rapeseed oil, seed oil, sesame oil, etc.; Animal oils made from animal fats, such as pork, beef and sheep fat. Edible fats and oils are an important ingredient in the human diet, with a daily intake of 25g per person, mainly providing calories and essential fatty acids, while enhancing the satiety and sensory palatability of food. The main sources of possible contamination of oils and fats are as follows:
(1) Agricultural pollution: chemical fertilizers, pesticides, and fungicides are commonly used in modern agriculture, and these substances are absorbed or contacted by crops to cause pollution of oil raw materials. (2) Industrial pollution: mainly the pollution of crops caused by the "three wastes" (waste water, waste gas, and waste residue). (3) In the process of edible oil processing, the solvent of leaching method of oil production, the lubricant on the processing machinery, and the industrial additives in the refining process can all cause oil pollution.
(4) Pollution in storage and transportation: cross-contamination can be caused by transportation vehicles, storage and transportation sites, and packaging containers in storage and transportation.
(5) Mildew pollution: mildew occurs in oil raw materials, and fungi produce toxins to cause pollution.
